A Gift that adds Health, Flavor, and Elegance
to Your Dining Table
The wonderful health benefits of a fresh spring
salad are often outweighed by using tasty but unhealthy creamy
dressings dominated by harmful oils and mayonnaise.
One of the simplest and healthiest alternatives
to dress your salad is with aged balsamic vinegar and extra-virgin
olive oil. Just sprinkle on some of the vinegar, then add
the oil, taste a leaf of the lettuce, and adjust the seasoning
to your taste. It's light, easy, very tasty and requires no
preparation!

Olive Oil
Mediterranean countries have recognized the importance of olive
oil for centuries. In Crete, a recent study showed that even
though 90% of Cretans consume an average of 60-70 pounds of
olive oil a year per person, the incidence of coronary disease
is very low compared to other countries.
Olive oil should be a healthy part of your
diet as it is refined and unheated, making it one of the "good"
oils for your diet. Some of the health benefits of consuming
olive oil are:
- Will not upset your critical
omega 6:3 ratio.
- Has as large an amount of monounsaturated
fatty acids (mainly oleic acid) that helps in cancer protection.
- Olive oil helps control your
LDL (bad) cholesterol levels while raising your HDL (good)
levels.
- Promotes bone formation in children and
protect the bones of the elderly.
- Olive oil also contains vitamins
K, E and polyphenols,supports
the defense mechanism that delays aging and helps protect
against atherosclerosis, carcinogenesis,
and liver disorders.
Balsamic Vinegar
Vinegar as a home remedy, is a weak acid that has been used
as an antiseptic medicine for thousands of years. True balsamic
vinegar of Modena comes from the northern part of Italy, near
the gulf of Genoa. It is made from unfermented juice from
white grapes known as "must" which has natural high
sugar content and is typically found in trebbiano grapes.
True balsamic vinegar is very dark in color, has a sweet,
fruity flavor and usually has a thicker consistency than white
vinegar.
True balsamic vinegar is aged a minimum of
12 years to receive authentication. Vinegars that have not
been aged for 12 years have a stronger "bite" and
do not have the sweet mellow taste of wooden barreled aged
balsamic.
Eating vinegar prior to a meal such
as part of an oil and vinegar salad dressing, can be very
beneficial to people with diabetes or high risk of developing
the disease. The
results of a study shows that taking two tablespoons of vinegar
prior to eating drastically lowered glucose
and insulin
spikes in the blood that occur after meals. These
spikes can cause major complications, like heart disease in
people with type 2 diabetes.
Vinegar has been used for thousands of years
as a tasty seasoning and a healthy tonic. Regular use of vinegar
in your diet can result in:
- Natural appetite suppressant
- Amino acids slowing the effects of
aging
- Disease fighting antioxidant
- Fewer headaches
- Enzymes that aid your metabolism
and improve your digestion
- Minerals to protect you from bone
diseases, treat fatigue and anemia
